Winemaking and Ageing\n\n<\/h2>\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t
\n\t\t\t\t
\n\t\t\t\t\t\t\t\t\tThe entire ripening cycle is monitored through berry tastings and\nphysicochemical analyses, thus determining the ideal harvest\ndate. We aim to harvest the grapes when the fruit expression is intense\n and they still exhibit a firm and\n structuring acidity. The grapes are harvested in 20kg boxes and transported\nto the winery. Once at the winery, they are destemmed and pressed\nvery gently in a pneumatic press. The resulting must is then\ndecanted, allowing the separation of the lees. The clear must is fermented in stainless steel vats with temperature control. At the end of fermentation, the wine was transferred to used French oak barrels with fine lees. The stirring of the lees (battonage) was carried out weekly for two months. Tastings were carried out to determine the ideal date for the end of the ageing period. Before\nbottling, a gentle filtration was performed.\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t

The bottles should be stored horizontally, in a cool place (15\u00baC) with a relative humidity of approximately 70%. When stored under ideal conditions, it will develop positively for a minimum of 10 years.<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/div>\n\t\t\t\t

It is ideal with intensely flavored dishes and is an excellent
